2 Soup Recipes Using Leftovers

There is nothing like a pot roast make you feel at home. Growing up, we always had a Sunday roast and then ate the leftovers through the week. Sometimes, however, you get tired of warming up the same roast over and over. Here are two soup recipes to re-invent that roast into a delicious, hearty soup. Don’t have leftover roast? You can brown some ground beef instead!

Spicy Beef Tomato Soup

1 quart thick tomato juice

2 beef bouillon cubes

1 cup shredded roast beef

1 Tbs parsley

1 Tbs onion flakes

1 tsp basil

1/4 tsp garlic powder

1/4 tsp pepper

1/4 tsp cumin

1/4 tsp oregano

favorite hot sauce

In a saucepan over medium heat mix all ingredients except beef together. Once those ingredients are mixed well, add beef and simmer until heated through. When serving, add hot sauce to your taste.

Leftover Beef Stew

Leftover beef roast, shredded or1 lb browned ground beef /stew meat

1 medium onion, diced

4 carrots peeled and cut into 1” pieces

1 rib celery

4 medium potatoes, quartered (peel them or not. I like peels)

12 oz stewed tomatoes

2 cups broth (chicken or beef)

1 Tbs worcestershire sauce

1 Tbs parsley

1 bay leaf

In soup pot, add all ingredients and bring to a boil. Cook until potatoes and carrots are tender, about 20 minutes. This recipe is completely flexible. If you had carrots or potatoes or onions with your roast, those can go in, as well as any gravy that is left over.
